The only real candidates I can think of for Snake don't match the physical profile at all. I say that, because the person needs to be able to pull off some mad stunts, and the only ones I can think of are the prominent stunt-intensive actors already out there. (Let's face it. Neither Jet Li nor Jason Statham fit the profile at all.)
Peter Jackson writing for MGS... I don't know if it would be all that good. I mean, yeah, King Kong was good and all... But it's not quite the same. I don't know. MAYBE he could pull it off.
Maybe it would be better to start the movie series chronologically? I.E. start with MGS3.
